Peanut and Chocolate Crunch Slice

The standard Sunday whip up. Although, today I had absolutely no intentions of baking but turns out I did and turns out I needed to share this with you all as it is absolutely de-lish! Not only is it really easy to throw together and satisfies your tastes buds but it’s full of nourishing ingredients that in turn makes you shine from the inside out! As always use organic ingredients where possible.

THE BASE 1 Cup of shredded coconut ½ Cup of walnuts ½ Cup of buckwheat groats (for the crunch!) Handful of dates – medjool or standard will work fine. Blitz this through your blender, place in a tray with baking paper and pop in the freezer to set while making the peanut butter layer. PEANUT BUTTER LAYER 1 Cup of smooth 100% peanut butter ½ cup of coconut oil 2 TBSP’s of pure maple Splash of vanilla extract Pinch of Himalayan salt Blend all ingredients until smooth but don’t over blend as you don’t want the oils to separate. Spread this on top of the base and pop back in the freezer. CHOCOLATE LAYER (The best bit!) ¼ Cup of coconut oil 2-3 TBSP’s of cacao 2 TBSP’s of pure maple Pinch of Himalayan salt Melt the coconut oil in a saucepan and allow it to slightly cool before adding the rest of the ingredients. Stir to combine and spread this deliciously chocolate layer as your final layer on top of the peanut butter layer. Pop it back in the freezer to set. It will take around thirty minutes. Cut into squares and enjoy with a nice cup of your favourite herbal tea! I store this in the fridge to keep it nice and fresh. Enjoy!
