Sweet Potato Patties with Avo Smash
Leafy greens served up at breakfast. Does it get any better? No. Haha! I'm a big fan of vegetables and rightly so as they are a huge importance in our diet and should be at the top of our food chain... Because... Well... They are at the top of the food chain! For me I try to get in my leafy greens three times a day or at least twice. These days our leafy greens seem to be a neglected gold mine as the western world depends heavily of meat, dairy and grains with a minimal amount of good quality plants in our diet.
So other than some delicious, nutritious leafy greens I’ve got some good quality fats going on from a beautiful looking avocado, some sweet potato for beta-carotene not to mention good carbs, and whisked through some quinoa that is high in protein! In actual fact, it's not the amount of protein that's impressive in quinoa it's the type of protein. Quinoa has the perfect balance of all nine amino acids that are essential for our nutrition. I think that is pretty cool. So, what does this mean? That quinoa is considered a COMPLETE protein. All nine amino acids are rarely found in plant proteins whereas it's commonly found in meat proteins.
Not to mention that quinoa has a whole heap more of beneficial vitamins and minerals in turn helping your body thrive!

WHAT DO I NEED FOR THE SWEET POTATO PATTIES
1 x Medium Sweet Potato
1/2 Cup of Quinoa
1/4 teaspoon of Cayenne Pepper
1/2 teaspoon of paprika
1/2 onion finely diced
2 cloves of garlic finely chopped 1 TBSP of Coconut Oil
AVO SMASH
½ an Avocado Handful of Coriander finely chopped (greatest herb ever) Juice of one lemon
Himalayan Salt and Black Pepper to taste
LEAFY GREENS 1 Handful of washed spinach or silver beet or a mixture of both!
WHAT NOW
Peel and wash your sweet potato and cut into quarters and add to a saucepan with just enough water to cook on a medium heat over a stove top.
Place your quinoa into a saucepan and add 1 cup of water (possibly a splash more) and cook for around 20 minutes or until the water has absorbed. While your sweet potato and quinoa is cooking prepare the rest of your ingredients along with your avocado smash. Once your quinoa and sweet potato is finished cooking drain any excess water from both and mash your sweet potato until nice and fluffy, add some salt and pepper to taste along with the quinoa, mix together and place to the side. Now you can sauté your diced onions and garlic in some coconut oil. Once this is cooked add this to your sweet potato and quinoa mash and add in the rest of your ingredients which will be cayenne pepper and paprika. Steam your greens – they will only take a couple of minutes. You can now roll your sweet potato mix into balls and flatten into patties ready for frying! Lightly fry each side of the patties and Voila – boom town – your patties are complete! Serve these up with your leafy greens layered in between your patties and top with your avo smash, additional coriander and some alfalfa sprouts if you have them (I didn’t hence the sliced carrot)
I'd even recommend throwing a poached egg on top of this and cutting the mixture in half so you have some left over for the next day! I sadly can't eat eggs - something I love very much and such a staple food you can add to your diet! Word to the wise: as this can take a little bit of prepping time I would recommend making the patty mixture the night before to save you time.
